Bánh Cay is a Vietnamese comfort food, to be consumed as a snack. The main ingredient is cassava mixed in hot pepper, one can add other ingredients to the mix such as mung bean, tapioca flour, replace chicken broth powder with veggie broth powder etc.
Ingredients:
1 lbs bag of frozen
grated cassava
1 tsp salt
1/2 tsp pepper
1 tsp sugar
1 tsp chicken
broth powder
1 tsp turmeric
powder
1 tsp Madras curry
powder
2 tbsp. crushed
chili
2 tbsp. general
purpose flour
1 tbsp. yellow corn
flour
3 tbsp. chopped
spring onion
1/2 chopped fresh
habanero pepper
Direction:
Defrost the grated
cassava in the microwave for few minutes.
Transfer the thawed
grated cassava to a medium mixing bowl and add all ingredients.
Mix well with a
wooden spoon until the mixture become a paste, about 3 - 5 minutes.
Heat vegetable oil
in a small sauce pan in high heat for about a couple of minutes. Put a wooden chop stick to the oil to check, if there are bubbles surrounding the tip then the oil is hot enough.
Reduce heat to high
medium, use the teaspoon to scoop the mixture and shape into oval piece and put in hot oil.
Cook about 5 -
6 pieces at a time, wait until they become golden then transfer to a tray (or plate) lined with
paper towel to absorb the oil. Repeat
until all the paste in the bowl is cooked.
Serve hot.
